Ingredients

  • 3 lbs pork loin
  • 1 cup orange juice
  • 1 tbsp orange zest
  • 2 tsp hickory liquid smoke
  • 4 cloves garlic cloves, minced
  • 3 tbsp brown sugar
  • 2 tbsp soy sauce
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 2 tbsp olive oil
  • 3 sprigs fresh rosemary sprigs

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a small bowl, mix together the orange juice, orange zest, hickory liquid smoke, minced garlic, brown sugar, soy sauce, salt, black pepper, and paprika to create the marinade.

Step 3

Pat the pork loin dry with paper towels and rub it all over with olive oil.

Step 4

Place the pork loin in a large resealable plastic bag or a shallow dish and pour the marinade over it. Marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more intense flavor.

Step 5

Remove the pork loin from the marinade, reserving the marinade for basting, and place it in a roasting pan.

Step 6

Add the fresh rosemary sprigs to the pan around the pork loin.

Step 7

Roast in the preheated oven for 1 hour and 30 minutes, or until the internal temperature reaches 145°F (63°C) using a meat thermometer.

Step 8

While the pork is roasting, heat the reserved marinade in a small saucepan over medium heat. Bring it to a simmer and cook for 5–7 minutes, stirring occasionally, until slightly thickened.

Step 9

Baste the pork loin with the reduced marinade every 20 minutes to keep it moist and flavorful.

Step 10

Once the pork is done, remove it from the oven and cover it loosely with aluminum foil. Let it rest for 10 minutes before slicing.

Step 11

Serve the pork loin sliced, drizzled with any remaining marinade sauce for extra flavor. Pair with roasted vegetables or a fresh salad.
