Ingredients

  • 1 lb Ground beef (80% lean)
  • 0.5 lb Ground pork
  • 2 Poblano peppers
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 0.5 tsp Ground cumin
  • 0.5 tsp Smoky chipotle chili powder
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 Avocado
  • 1 Lime
  • 4 slices Monterey Jack cheese
  • 4 Hamburger buns
  • 1 can (4 oz) Green chilies (roasted, diced, canned or fresh)
  • 0.5 cup Sour cream
  • 2 tbsp Fresh cilantro (chopped)
  • 2 tbsp Butter
  • 1 tbsp Vegetable oil

Directions

Step 1

1. Roast the poblano peppers over an open flame or under a broiler until the skin is charred and blistered. Place them in a paper bag or bowl covered with plastic wrap for 10 minutes to steam. Once cooled, peel off the skin, remove the seeds, and dice them. Set aside.

2. In a mixing bowl, combine the ground beef, ground pork, diced poblanos, onion powder, garlic powder, ground cumin, chipotle chili powder, salt, and black pepper. Mix gently but thoroughly, being careful not to overwork the meat.
