  • 1.5 pounds Boneless, skinless chicken thighs
  • 12 ounces Smoked sausage, sliced
  • 1 pound Large shrimp, peeled and deveined
  • 1 medium Onion, diced
  • 1 medium Bell pepper, diced
  • 2 stalks Celery, chopped
  • 3 cloves Garlic, minced
  • 2 cups Chicken broth
  • 1 14.5-ounce can Canned diced tomatoes, undrained
  • 2 tablespoons Tomato paste
  • 1 teaspoon Paprika
  • 1 teaspoon Dried thyme
  • 0.25 teaspoon Cayenne pepper (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 4 cups Cooked white rice (for serving)

Directions

Step 1

Heat a skillet over medium heat and add the olive oil. Sear the chicken thighs on both sides for 2-3 minutes until lightly browned. Set them aside.

In the same skillet, add the smoked sausage slices and cook for 2-3 minutes until slightly browned. Remove from the skillet and set aside.
