Ingredients

  • 3 pounds Beef brisket
  • 4 whole Carrots, peeled and cut into large chunks
  • 5 medium Potatoes, peeled and quartered
  • 3 whole Celery stalks, cut into large pieces
  • 1 large Onion, sliced
  • 4 cloves Garlic, minced
  • 2 cups Beef broth
  • 3 tablespoons Tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Brown sugar
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried thyme
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Cornstarch
  • 2 tablespoons Cold water

Directions

Step 1

Pat the beef brisket dry with paper towels and season generously with salt and black pepper on all sides.

Step 2

Heat olive oil in a large skillet over medium-high heat. Sear the brisket on all sides until browned, about 3-4 minutes per side. Remove from the pan and set aside.

Step 3

In the same skillet, add the minced garlic and sauté for 1 minute until fragrant. Add the beef broth, tomato paste, Worcestershire sauce, brown sugar, smoked paprika, and dried thyme. Stir to combine and simmer for 2-3 minutes. Remove from heat.

Step 4

Place the carrots, potatoes, celery, and onion in the bottom of a 6-quart crock pot. Season the vegetables with a pinch of salt and pepper.

Step 5

Place the seared brisket on top of the vegetables. Pour the prepared sauce evenly over the brisket and vegetables.

Step 6

Cover and cook on low for 8 hours, or until the brisket is tender and easily pulls apart with a fork.

Step 7

Once done, carefully remove the brisket and vegetables from the crock pot and set them on a serving platter. Cover loosely with foil to keep warm.

Step 8

To thicken the sauce, mix the cornstarch and cold water in a small bowl until smooth. Stir the mixture into the crock pot liquid. Turn the crock pot to high and let the sauce cook for 5-10 minutes until thickened.

Step 9

Slice the brisket against the grain and serve with the vegetables, topped with the thickened sauce.
