Ingredients

  • 3 pounds 7-bone chuck roast
  • 1 large Yellow onion
  • 4 medium Carrots
  • 3 medium Russet potatoes
  • 2 cups Coca-Cola
  • 1 cup Beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Tomato paste
  • 3 cloves Garlic cloves
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Dried thyme
  • 1 leaf Bay leaf

Directions

Step 1

Season the 7-bone chuck roast on both sides with salt, black pepper, and dried thyme.

Step 2

Heat vegetable oil in a large skillet over medium-high heat. Sear the roast for 3-4 minutes on each side until browned. Transfer to a crockpot.

Step 3

Peel and slice the onion into thick wedges. Peel the carrots and cut into large chunks. Wash and quarter the russet potatoes. Place these vegetables around the roast in the crockpot.

Step 4

Mince the garlic cloves and add them on top of the roast.

Step 5

In a mixing bowl, combine Coca-Cola, beef broth, Worcestershire sauce, and tomato paste. Stir until well blended, then pour the mixture over the roast and vegetables in the crockpot.

Step 6

Add the bay leaf to the liquid in the crockpot for additional flavor.

Step 7

Cover the crockpot with the lid and cook on low heat for 8 hours, or until the meat is tender and falling off the bone.

Step 8

Once cooked, remove the bay leaf and discard it. Carefully transfer the roast and vegetables to a serving platter.

Step 9

Drain the remaining liquid into a saucepan and simmer over medium heat. Optionally, thicken the liquid with a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) to create a rich gravy.

Step 10

Serve the pot roast with the vegetables and gravy drizzled on top. Enjoy!
