Season the 7-bone chuck roast on both sides with salt, black pepper, and dried thyme.
Heat vegetable oil in a large skillet over medium-high heat. Sear the roast for 3-4 minutes on each side until browned. Transfer to a crockpot.
Peel and slice the onion into thick wedges. Peel the carrots and cut into large chunks. Wash and quarter the russet potatoes. Place these vegetables around the roast in the crockpot.
