Ingredients

  • 200 grams asparagus
  • 8 large eggs
  • 60 ml heavy cream
  • 50 grams Parmesan cheese, grated
  • 2 tablespoons olive oil
  • 15 grams butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Wash the asparagus and trim the tough ends. Cut the spears into 2-inch pieces.

Step 3

In a large mixing bowl, whisk the eggs together with the heavy cream, Parmesan cheese, salt, and black pepper. Set aside.

Step 4

Heat the olive oil and butter in an oven-safe skillet over medium heat.

Step 5

Add the chopped onion to the skillet and sauté for 3-4 minutes until translucent.

Step 6

Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

Step 7

Add the asparagus pieces to the skillet and sauté for 4-5 minutes until they are tender but still slightly crisp.

Step 8

Reduce the heat to low and pour the egg mixture evenly over the vegetables in the skillet. Let it cook on the stovetop for 2-3 minutes until the edges start to set.

Step 9

Transfer the skillet to the preheated oven and bake for 15-18 minutes, or until the frittata is puffed up and golden, and the center is set.

Step 10

Remove the skillet from the oven and let the frittata rest for 5 minutes before slicing.

Step 11

Garnish with chopped fresh parsley, if desired. Serve warm or at room temperature.
