Ingredients

  • 2 tablespoons Olive oil
  • 1 pound Ground beef
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic, minced
  • 1 14-ounce can Diced tomatoes
  • 2 tablespoons Tomato paste
  • 1 4-ounce can Green chilies, diced
  • 1 15-ounce can Black beans, rinsed and drained
  • 1 cup Frozen corn kernels
  • 1 tablespoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 8.5-ounce package Cornbread mix
  • 0.5 cup Milk
  • 1 large Egg, lightly beaten
  • 1 cup Shredded cheddar cheese
  • 2 tablespoons Fresh cilantro, chopped (optional for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C). Grease a 9x13-inch baking dish and set aside.

Step 2

Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.

Step 3

Add the ground beef to the skillet. Cook and break it apart with a spoon until browned, about 5-7 minutes. Drain any excess grease if needed.

Step 4

Stir in the diced tomatoes, tomato paste, diced green chilies, black beans, frozen corn, chili powder, cumin, salt, and ground black pepper. Simmer for 5 minutes to allow the flavors to meld and the mixture to slightly thicken. Remove from heat.

Step 5

Pour the beef mixture into the prepared baking dish, spreading it out evenly.

Step 6

In a medium mixing bowl, prepare the cornbread mixture by combining the cornbread mix, milk, and beaten egg. Stir until just combined (do not overmix).

Step 7

Carefully spread the cornbread batter evenly over the beef mixture in the baking dish.

Step 8

Sprinkle the shredded cheddar cheese over the top of the cornbread layer.

Step 9

Bake in the preheated oven for 25-30 minutes, or until the cornbread is golden brown and cooked through (a toothpick inserted into the cornbread should come out clean).

Step 10

Let the tamale pie cool for 5 minutes before serving. Garnish with fresh cilantro, if desired, and enjoy!
