Ingredients

  • 6 large russet potatoes
  • 4 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup sour cream
  • 2 cups shredded sharp cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil
  • 2 tablespoons chopped parsley (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.

Step 2

Peel the russet potatoes and cut them into 1/4-inch thick slices. Place them in a large pot of lightly salted water and bring to a boil. Cook for 10-12 minutes until just tender but not falling apart. Drain and set aside.

Step 3

In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour to create a roux. Cook for 1-2 minutes, whisking constantly, until golden and bubbly.

Slowly whisk in the milk and continue to cook, stirring constantly, until the mixture thickens, about 3-5 minutes.

Remove the saucepan from heat and stir in the sour cream, 1 1/2 cups of cheddar cheese, garlic powder, onion powder, salt, and black pepper. Mix until smooth and creamy.

In a small mixing bowl, combine the breadcrumbs and olive oil. Sprinkle the breadcrumb mixture evenly over the top of the casserole, followed by the remaining 1/2 cup of cheddar cheese.

Bake in the preheated oven for 35-40 minutes, or until the top is golden and bubbly.

Remove from the oven and let the casserole rest for 5-10 minutes before serving. Garnish with chopped parsley if desired.
