Ingredients

  • 0.75 cups Unsalted butter, softened
  • 1 cups Granulated sugar
  • 0.25 cups Molasses
  • 1 units Large egg
  • 2 cups All-purpose flour
  • 2 teaspoons Baking soda
  • 1 teaspoons Ground cinnamon
  • 1 teaspoons Ground ginger
  • 0.5 teaspoons Ground cloves
  • 0.5 teaspoons Salt
  • 0.5 cups Granulated sugar (for rolling)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer on medium speed until light and fluffy, about 2-3 minutes.

Step 3

Add the molasses and egg to the bowl and beat until fully combined.

Step 4

In a separate medium bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until the dough is just combined. Do not overmix.

Step 6

Scoop out tablespoon-sized portions of dough and roll them into balls using your hands.

Step 7

Place the remaining granulated sugar for rolling in a small bowl. Roll each dough ball in the sugar to coat it completely.

Step 8

Arrange the sugar-coated dough balls on the prepared baking sheets, leaving about 2 inches of space between each ball to allow for spreading.

Step 9

Bake in the preheated oven for 8-10 minutes, or until the edges are set but the centers still look slightly undercooked. This ensures a chewy texture.

Step 10

Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.

Step 11

Serve and enjoy! Store any leftovers in an airtight container at room temperature for up to 5 days.
