Ingredients

  • 12 oz pasta (rotini or bowtie)
  • 2 cups cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 red bell pepper, diced
  • 0.5 red onion, finely chopped
  • 0.75 cup kalamata olives, sliced
  • 0.5 cup feta cheese, crumbled
  • 0.25 cup fresh basil leaves, chopped
  • 0.25 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 clove garlic, minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta and rinse under cold water to stop the cooking process. Set aside to cool.

In a large mixing bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, kalamata olives, and feta cheese.
