Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoons Salt
  • 0.75 cups Unsalted butter, softened
  • 0.75 cups Granulated sugar
  • 0.5 cups Packed light brown sugar
  • 2 Large eggs
  • 1 teaspoon Pure vanilla extract
  • 1 cup Chopped dried apricots
  • 0.5 cups Chopped walnuts or pecans (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, using a hand mixer or stand mixer, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy, about 2-3 minutes.

Step 4

Add the eggs, one at a time, beating well after each addition. Then mix in the vanilla extract.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Step 6

Using a spatula or wooden spoon, fold in the chopped dried apricots and, if desired, the chopped walnuts or pecans.

Step 7

Use a tablespoon or small cookie scoop to drop dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are lightly golden. The centers may look slightly underbaked but will set as they cool.

Step 9

Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Store the cookies in an airtight container at room temperature for up to 5 days. Enjoy!
