  • 12 sheets Lasagna noodles
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 1 medium Zucchini, diced
  • 1 medium Red bell pepper, diced
  • 4 cups Baby spinach
  • 4 cups Marinara sauce
  • 2 cups Ricotta cheese
  • 1 whole Large egg
  • 2 cups Mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Cook the lasagna noodles in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.

Step 3

In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes or until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the zucchini and red bell pepper to the skillet. Cook for 5-6 minutes, stirring occasionally, until the vegetables are tender. Stir in the baby spinach and cook until wilted, about 2-3 minutes. Season with salt, black pepper, dried basil, and dried oregano. Remove from heat.

Repeat the layers two more times (noodles, ricotta mixture, vegetables, marinara sauce, and mozzarella cheese).

Step 10

For the final layer, place lasagna noodles on top, spread the remaining marinara sauce, and sprinkle with the remaining mozzarella and parmesan cheese.

Step 11

Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 25 minutes.

Step 12

Remove the foil and bake for an additional 20-25 minutes, or until the cheese is bubbly and golden brown.

Step 13

Let the lasagna cool for 10-15 minutes before slicing and serving. Enjoy!
