Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery stalks, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef or lamb
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour
  • 1 cup beef or chicken broth
  • 1 cup frozen peas
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon Worcestershire sauce
  • 4 large russet potatoes, peeled and cubed
  • 4 tablespoons unsalted butter
  • 0.5 cup milk
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup shredded sharp cheddar cheese (optional, for topping)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a large skillet, heat olive oil over medium heat. Add diced onion, carrots, celery, and garlic. Sauté for about 5 minutes, or until vegetables are softened.

Step 3

Add ground beef or lamb to the skillet and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat if necessary.

Step 4

Stir in tomato paste and cook for 1 minute. Sprinkle the flour over the mixture and stir well to combine. Cook for another minute to remove the raw flour taste.

Step 5

Gradually pour in the broth, stirring constantly to create a thick sauce. Add frozen peas, thyme, Worcestershire sauce, salt, and pepper. Simmer for 5 minutes, then remove from heat.

Step 6

While the filling is simmering, place the peeled and cubed potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15 minutes.

Step 7

Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy. Adjust milk if needed for desired consistency.

Step 8

Transfer the meat and vegetable mixture into a 9-inch pie dish or baking dish. Spread the mashed potatoes evenly over the top, making sure to seal the edges to prevent the filling from bubbling out.

Step 9

If using cheddar cheese, sprinkle it evenly over the mashed potatoes.

Step 10

Place the dish in the preheated oven and bake for 20-25 minutes, or until the topping starts to turn golden brown and the filling is bubbling.

Step 11

Remove from the oven and let it rest for 5 minutes before serving. Enjoy Sara's Shepherd's Pie with a crisp green salad or crusty bread on the side!
