Ingredients

  • 800 grams pumpkin puree
  • 750 milliliters vegetable broth
  • 1 medium, diced onion
  • 2 cloves, minced garlic
  • 2 tablespoons olive oil
  • 200 milliliters heavy cream
  • 0.5 teaspoons ground cinnamon
  • 0.25 teaspoons ground nutmeg
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 loaf crusty bread (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion and cook for 4-5 minutes, stirring occasionally, until softened and translucent.

Step 3

Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Step 4

Add the pumpkin puree and vegetable broth to the pot. Stir to combine, and bring the mixture to a gentle simmer.

Step 5

Once simmering, reduce the heat to low and add the ground cinnamon, ground nutmeg, salt, and black pepper. Stir well.

Step 6

Let the soup simmer gently for 15-20 minutes, stirring occasionally to prevent sticking.

Step 7

Using an immersion blender (or transferring the soup in batches to a countertop blender), blend the soup until smooth and creamy. Exercise caution with hot liquids.

Step 8

Once blended, return the soup to low heat and stir in the heavy cream. Heat through for another 2-3 minutes, but do not let it boil.

Step 9

Taste and adjust seasonings as needed, adding more salt or pepper to your preference.

Step 10

Ladle the soup into bowls and serve warm, optionally paired with slices of crusty bread for dipping.
