Ingredients

  • 6 pieces chicken thighs (bone-in, skin-on)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 medium yellow onion (finely chopped)
  • 4 garlic cloves (minced)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole-grain mustard
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons fresh parsley (chopped, for garnish)

Directions

Step 1

Pat the chicken thighs dry with paper towels and season both sides generously with salt and black pepper.

Step 2

Heat a large skillet over medium-high heat and add the olive oil. Once hot, place the chicken thighs skin-side down and sear for 5-6 minutes until golden brown. Flip the chicken over and cook for another 3-4 minutes. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, lower the heat to medium, add the butter, and let it melt. Add the chopped onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds, until fragrant.

Step 4

Add the Dijon mustard and whole-grain mustard to the skillet, stirring until combined. Pour in the chicken broth and heavy cream and mix well. Sprinkle in the fresh thyme leaves.

Step 5

Bring the sauce to a simmer, then return the chicken thighs to the skillet, skin-side up. Spoon some sauce over the chicken, reduce the heat to low, and cover with a lid. Let the chicken simmer for 20-25 minutes, or until fully cooked (internal temperature should reach 165°F (74°C)).

Step 6

Remove the lid and let the sauce reduce slightly for 3-5 minutes, stirring occasionally.

Step 7

Garnish the dish with freshly chopped parsley and serve hot over rice, mashed potatoes, or with a side of crusty bread to soak up the delicious sauce.
