Ingredients

  • 4 large Russet potatoes
  • 1 cup Nonfat plain Greek yogurt
  • 1 cup Low-fat shredded cheddar cheese
  • 0.5 cup Skim milk
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Chopped green onions (optional, for garnish)
  • 1 as needed Nonstick cooking spray

Directions

Step 1

Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish lightly with nonstick cooking spray.

Step 2

Peel and cut the potatoes into bite-sized cubes, approximately 1 inch in size. Place them in a large pot and cover with water.

Step 3

Bring the pot to a boil over high heat, then reduce the heat to medium and cook for 10-12 minutes, or until the potatoes are fork-tender. Drain and set aside.

Step 4

In a mixing bowl, combine the Greek yogurt, shredded cheddar cheese, skim milk, garlic powder, onion powder, paprika, salt, and black pepper. Stir until well combined.

Step 5

Add the drained potatoes to the yogurt and cheese mixture. Gently toss to coat all the potatoes evenly.

Step 6

Transfer the coated potatoes into the prepared baking dish and spread them out in an even layer.

Step 7

Bake in the preheated oven for 25-30 minutes, or until the top is slightly golden and bubbly.

Step 8

Remove the dish from the oven and allow it to sit for 5 minutes. Garnish with chopped green onions, if desired, before serving.
