Ingredients

  • 4 medium Russet potatoes
  • 4 tablespoons Unsalted butter
  • 3 cloves Garlic cloves, minced
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Sour cream
  • 2 tablespoons Chopped green onions

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.

Step 2

Scrub the potatoes clean under running water, then pat them dry with a towel.

Step 3

Poke each potato a few times with a fork to allow steam to escape, then place them on the prepared baking sheet.

Step 4

Bake the potatoes for 40-45 minutes, or until they are tender and can be easily pierced with a fork. Remove from oven and let cool for 10 minutes.

Step 5

Cut each potato in half lengthwise. Using a spoon, carefully scoop out most of the potato flesh, leaving about 1/4 inch of potato on the skin. Reserve the scooped-out potato flesh for another use.

Step 6

In a small saucepan over low heat, melt the butter and stir in the minced garlic. Cook for 1-2 minutes, stirring constantly, until the garlic is fragrant but not browned. Remove from heat and stir in the olive oil.

Step 7

Brush the inside and outside of each potato skin with the garlic butter mixture. Place the skins flesh side up on the baking sheet.

Step 8

Sprinkle the potato skins evenly with salt, pepper, and paprika.

Step 9

Return the potato skins to the oven and bake for 10 minutes, or until they begin to turn golden and crispy.

Step 10

Remove the skins from the oven and sprinkle the shredded cheddar cheese evenly into each one. Return them to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.

Step 11

Remove the potato skins from the oven and let cool for 2-3 minutes. Top each one with a dollop of sour cream and a sprinkle of chopped green onions.

Step 12

Serve immediately and enjoy your crispy, cheesy, garlic-infused potato skins!
