Ingredients

  • 4 pieces large tortillas
  • 6 pieces eggs
  • 2 tablespoons milk
  • 1 tablespoon butter
  • 1 cup shredded cheddar cheese
  • 4 slices bacon
  • 1 piece red bell pepper, diced
  • 0.5 piece onion, diced
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup salsa

Directions

Step 1

In a large skillet, cook the bacon over medium heat until crispy. Remove and place on a paper towel-lined plate to drain. Once cooled, crumble into bite-sized pieces and set aside.

In the same skillet, heat the olive oil over medium heat. Add the diced red bell pepper and onion. Sauté for 4–5 minutes, or until the vegetables soften. Remove from heat and set aside.
