  • 28 ounces diced tomatoes, with juices
  • 4 cups vegetable stock
  • 1 large russet potato, peeled and diced
  • 1.5 cups corn kernels, fresh or frozen
  • 0.5 cup heavy cream
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and cook for 3-4 minutes, until translucent.

Stir in the minced garlic, diced red bell pepper, and jalapeño, and sauté for another 2-3 minutes.
