  • 3 lbs Chuck roast
  • 2 tbsp Olive oil
  • 2 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Ground cumin
  • 1 tsp Chili powder
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 1 large Red onion, chopped
  • 1 large Red bell pepper, diced
  • 1 large Green bell pepper, diced
  • 1 cup Corn kernels (fresh, frozen, or canned)
  • 1 cup Black beans, drained and rinsed
  • 14.5 oz Canned diced tomatoes with green chilies
  • 1 cup Beef broth
  • 2 tbsp Fresh cilantro, chopped
  • 1 Lime, juiced

Directions

Step 1

Heat olive oil in a large skillet over medium-high heat.

Step 2

Season both sides of the chuck roast with salt, black pepper, ground cumin, chili powder, onion powder, and garlic powder.

Sear the chuck roast in the hot skillet for 2-3 minutes on each side until browned. Remove the roast and set aside.
