Ingredients

  • 3 cups Fresh corn kernels (from about 4 ears of corn)
  • 1 can (15 ounces) Black beans, rinsed and drained

  • 1 medium Red bell pepper, diced
  • 1 large Avocado, diced
  • 0.5 cup Red onion, finely diced
  • 0.25 cup Cilantro, chopped
  • 3 tablespoons Lime juice (freshly squeezed)
  • 2 tablespoons Olive oil
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

1. Bring a pot of water to a boil. Add the fresh corn kernels and blanch for 2-3 minutes. Drain and rinse the corn under cold water to stop the cooking process. Set aside to cool.
