  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tbsp tomato paste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tbsp fresh cilantro, chopped (optional, for garnish)
  • 4 lime wedges (optional, for serving)

Directions

Step 1

Cook the penne pasta according to the package instructions. Drain and set aside.

Cut the chicken breast into bite-sized cubes. Season with salt, black pepper, paprika, cumin, and chili powder.
