Ingredients

  • 2 pieces Chicken breasts
  • 2 tablespoons Olive oil

  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 can Black beans
  • 1 cup Corn kernels
  • 1 medium Red bell pepper
  • 1 cup Cherry tomatoes
  • 0.5 medium Red onion
  • 1 large Avocado
  • 0.25 cup Cilantro, chopped
  • 3 tablespoons Lime juice
  • 1 tablespoon Honey
  • 1 clove Garlic, minced

Directions

Step 1

Preheat grill or stovetop grill pan to medium-high heat.

Step 2

In a small bowl, whisk together 1 tablespoon of olive oil, cumin, chili powder, 0.5 teaspoon salt, and 0.25 teaspoon black pepper.

Step 3

Brush the chicken breasts with the spice mixture to coat evenly.

Grill the chicken breasts for 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C). Remove from heat and let rest for 5 minutes before slicing into strips.
