Ingredients

  • 2 cups All-purpose flour
  • 0.75 cup Granulated sugar
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 2 pieces Large eggs
  • 0.25 cup Unsalted butter, melted and cooled
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Almond extract
  • 1 tablespoon Orange zest (from 1 large orange)
  • 0.75 cup Dried cranberries, roughly chopped
  • 0.75 cup Shelled pistachios, roughly chopped
  • 4 ounces White chocolate, melted (optional, for drizzling or dipping)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper and set aside.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3

In a separate bowl, whisk the eggs, melted butter, vanilla extract, almond extract, and orange zest until well combined.

Step 4

Gradually add the wet ingredients to the dry ingredients, mixing with a wooden spoon or your hands until a sticky dough forms.

Step 5

Gently fold in the chopped dried cranberries and pistachios until evenly distributed.

Step 6

Divide the dough in half and, on a lightly floured surface, shape each portion into a log approximately 12 inches long and 2 inches wide. Transfer the logs to the prepared baking sheet, leaving space between them.

Step 7

Bake in the preheated oven for 25 minutes, or until the logs are lightly golden and firm to the touch. Remove from the oven and let cool on the baking sheet for 10 minutes.

Step 8

Using a sharp serrated knife, slice the logs diagonally into 1/2-inch thick biscotti pieces. Arrange the slices cut-side down on the baking sheet.

Step 9

Return the biscotti to the oven and bake for an additional 10 minutes. Flip each slice and bake for another 5 minutes, or until the biscotti are crisp and golden.

Step 10

Remove from the oven and let cool completely on a wire rack.

Step 11

If desired, drizzle or dip the biscotti in melted white chocolate for an extra festive touch. Allow the chocolate to set before serving or storing.

Step 12

Store the biscotti in an airtight container at room temperature for up to 2 weeks or freeze for longer storage.
