Ingredients

  • 400 grams egg noodles
  • 300 grams chicken breast (thinly sliced)
  • 3 tablespoons vegetable oil
  • 3 cloves garlic (minced)
  • 1 teaspoon ginger (minced)
  • 4 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon dark soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1 medium carrot (julienned)
  • 1 medium red bell pepper (sliced into thin strips)
  • 3 stalks green onions (sliced into 1-inch pieces)
  • 100 grams bean sprouts
  • 2 tablespoons water

Directions

Step 1

Boil the egg noodles in salted water as per the package instructions until just al dente. Drain and rinse under cold water. Set aside.

Step 2

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the sliced chicken breast and stir-fry until fully cooked (about 5-7 minutes). Remove the chicken from the wok and set aside.

Step 3

In the same wok, add the remaining 2 tablespoons of vegetable oil. Heat over medium-high heat, then add the minced garlic and ginger. Stir-fry for 30 seconds until fragrant.

Step 4

Add the julienned carrot and red bell pepper to the wok. Stir-fry for 2-3 minutes until the vegetables start to soften.

Step 5

Return the cooked chicken to the wok. Add the cooked egg noodles and toss everything together.

Step 6

In a small bowl, mix the soy sauce, oyster sauce, dark soy sauce, sesame oil, sugar, and 2 tablespoons of water. Pour the sauce over the noodles and stir well to coat everything evenly.

Step 7

Add the green onions and bean sprouts to the wok. Stir-fry for another 2 minutes until heated through and the vegetables retain a slight crunch.

Step 8
