Wash and slice the strawberries, peach, orange, and lemon. Set them aside.
In a large pitcher, combine the honey and orange juice. Stir until the honey is completely dissolved.
Pour in the rosé wine and peach liqueur, and stir well to combine.
Add the sliced fruits (strawberries, peach, orange, and lemon) to the pitcher.
Gently crush the mint leaves in your hand to release their aroma and add them to the pitcher.
Refrigerate the sangria for at least 2-4 hours to allow the flavors to meld.
Just before serving, add the sparkling water and stir gently.
