Ingredients

  • 8 ounces Egg noodles
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, finely chopped
  • 2 stalks Celery, finely diced
  • 2 cloves Garlic, minced
  • 8 ounces White button mushrooms, sliced
  • 2 tablespoons All-purpose flour
  • 1.5 cups Low-sodium chicken or vegetable broth
  • 1 cup Low-fat milk
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 cup Frozen peas
  • 12 ounces Canned tuna, packed in water, drained
  • 1 cup Shredded reduced-fat cheddar cheese
  • 0.5 cup Whole-wheat breadcrumbs
  • 2 tablespoons Parmesan cheese, grated
  • 0 Cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly coat a 9x13-inch baking dish with cooking spray.

Step 2

Cook the egg noodles according to package directions. Drain and set aside.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the chopped onion and celery, and sauté for 4-5 minutes until softened.

Step 4

Add the minced garlic and sliced mushrooms to the skillet. Cook, stirring occasionally, for another 5-6 minutes until the mushrooms release their liquid and begin to brown.

Step 5

Sprinkle the flour over the vegetable mixture and stir to coat. Cook for 1 minute to eliminate the raw flour taste.

Step 6

Slowly whisk in the broth and milk, ensuring there are no lumps. Bring the mixture to a simmer and cook for 3-4 minutes, stirring frequently, until the sauce thickens.

Step 7

Season the sauce with salt and black pepper. Stir in the peas, canned tuna, and cooked noodles until everything is evenly coated.

Step 8

Transfer the mixture to the prepared baking dish. Sprinkle the shredded cheddar cheese evenly over the top.

Step 9

In a small bowl, combine the breadcrumbs and grated Parmesan cheese. Sprinkle this mixture over the casserole.

Step 10

Bake in the preheated oven for 20 minutes, or until the casserole is bubbling and the topping is golden brown.

Step 11

Allow the casserole to cool for 5 minutes before serving.
