Ingredients

  • 226 grams Unsalted butter
  • 120 grams Powdered sugar (divided)
  • 2 teaspoons Pure vanilla extract
  • 240 grams All-purpose flour
  • 0.25 teaspoons Salt
  • 120 grams Pecans (chopped finely)
  • 180 grams Extra powdered sugar (for coating)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, cream the unsalted butter and 120 grams of powdered sugar together until light and fluffy. This should take about 2-3 minutes using an electric mixer on medium speed.

Step 3

Mix in the vanilla extract until fully incorporated.

Step 4

In a separate bowl, whisk together the all-purpose flour and salt. Gradually add the flour mixture to the butter mixture, beating on low speed until just combined.

Step 5

Fold in the finely chopped pecans using a spatula or wooden spoon.

Step 6

Using a tablespoon or a small cookie scoop, portion out the dough and roll it into small 1-inch balls. Place the balls onto the prepared baking sheet, leaving about 1 inch between them.

Step 7

Bake in the preheated oven for 10-12 minutes, or until the bottoms of the cookies are lightly golden. The tops should remain pale.

Step 8

Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Step 9

While the cookies are still warm, gently roll them in the extra 180 grams of powdered sugar until fully coated. For a thicker coating, roll the cookies in powdered sugar a second time after they have completely cooled.

Step 10

Store the cookies in an airtight container at room temperature for up to one week. They can also be frozen for longer storage.
