Peel the russet potatoes, cut them into evenly sized chunks, and place them in a large pot.
Fill the pot with enough water to cover the potatoes completely. Bring to a boil over medium-high heat and cook until the potatoes are fork-tender, about 20-25 minutes.
Drain the water and transfer the potatoes to a large mixing bowl. Mash the potatoes until smooth and free of lumps.
Stir in the unsalted butter, heavy cream, granulated sugar, and salt while the potatoes are still warm. Mix thoroughly to ensure the ingredients are evenly incorporated.
Allow the potato mixture to cool completely, then cover and refrigerate for at least 4 hours or overnight.
Once chilled, mix the potato mixture with 1 cup of flour. Gradually add the remaining flour, a little at a time, until a soft, non-sticky dough forms. You may not need all the flour.
Preheat a large griddle or dry skillet over medium-high heat.
Divide the dough into 12 equal portions and roll each piece into a ball.
Lightly flour your work surface and rolling pin. Roll out one dough ball into a thin, round sheet, about 1/16-inch thick.
Carefully transfer the rolled dough to the hot griddle. Cook for 1-2 minutes on each side until light brown spots begin to form. Be careful not to overcook, as lefse should remain soft and pliable.
Remove the lefse from the griddle and place it on a clean kitchen towel to cool. Repeat with the remaining dough balls.
Once cooled, stack the lefse between sheets of parchment paper to prevent sticking. Serve immediately with your favorite toppings or fillings, or store in an airtight container for later use.
