Ingredients

  • 4 lbs Russet potatoes
  • 0.5 cup Unsalted butter
  • 8 oz Cream cheese
  • 1 cup Sour cream
  • 0.5 cup Whole milk
  • 1 tsp Garlic powder
  • 1.5 tsp Salt
  • 0.5 tsp Black pepper
  • 2 cups Shredded cheddar cheese
  • 2 tbsp Green onions (optional, for garnish)

Directions

Step 1

Peel and chop the potatoes into large chunks. Place them in a large pot and cover with cold water.

Step 2

Bring the pot to a boil over medium-high heat, then reduce heat and simmer for 15-20 minutes, or until the potatoes are fork-tender.

Step 3

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish.

Step 4

Drain the cooked potatoes and return them to the pot. Mash the potatoes until smooth, or to your desired consistency.

Step 5

Add the butter, cream cheese, sour cream, and milk to the mashed potatoes. Mix until fully combined and creamy.

Step 6

Stir in the garlic powder, salt, and black pepper, adjusting seasoning to taste.

Step 7

Transfer the mashed potato mixture into the prepared casserole dish and spread it evenly.

Step 8

Sprinkle the shredded cheddar cheese over the top of the potatoes, covering them completely.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Step 10

For added browning, turn on the broiler for the last 2-3 minutes, watching closely to avoid burning.

Step 11

Remove the casserole from the oven and let it cool for 5 minutes. Sprinkle with chopped green onions, if desired, before serving.
