Ingredients

  • 8 oz Pasta (rotini or bowtie)
  • 1 large Cucumber
  • 1.5 cups Cherry tomatoes
  • 0.5 medium Red onion
  • 0.5 cup Feta cheese
  • 3 tbsp Extra virgin olive oil
  • 2 tbsp Red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove Garlic
  • 1 tsp Dried oregano
  • 0.5 tsp Salt
  • 0.25 tsp Ground black pepper
  • 2 tbsp Fresh parsley (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente (about 8-10 minutes). Drain, rinse with cold water, and set aside to cool.

Step 2

While the pasta is cooking, prepare the vegetables. Peel the cucumber if desired, and dice it into small cubes. Halve the cherry tomatoes, and finely dice the red onion.

In a large mixing bowl, combine the cooled pasta, cucumber, cherry tomatoes, and red onion.
