  • 200 grams Graham cracker crumbs
  • 85 grams Unsalted butter, melted
  • 25 grams Granulated sugar
  • 450 grams Cream cheese, softened
  • 150 grams Granulated sugar
  • 120 ml Sour cream
  • 60 ml Fresh lime juice
  • 2 teaspoons Lime zest
  • 3 units Large eggs
  • 1 teaspoon Vanilla extract
  • 1 cup Whipped cream (optional, for garnish)
  • 1 serving Fresh lime slices or zest (optional, for garnish)

Directions

Step 1

Preheat your oven to 175°C (350°F). Grease the bottom and sides of a 9-inch springform pan and set aside.

In a medium mixing bowl, combine the graham cracker crumbs, melted butter, and 25 grams of granulated sugar. Mix until the crumbs are evenly moistened.

Press the graham cracker mixture firmly into the bottom of the prepared springform pan to form an even crust. Bake the crust for 8-10 minutes, then let it cool while you prepare the filling.

In a large mixing bowl, beat the softened cream cheese and 150 grams of granulated sugar with an electric mixer on medium speed until smooth and creamy (about 3 minutes).
