Ingredients

  • 2 pounds beef stew meat
  • 0.25 cup all-purpose flour
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large yellow onion
  • 4 medium carrots
  • 3 medium celery stalks
  • 4 medium russet potatoes
  • 3 cloves garlic cloves
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 leaf bay leaf
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley

Directions

Step 1

Start by preparing your ingredients. Dice the onion, slice the carrots and celery into bite-sized pieces, peel and cube the potatoes, and mince the garlic cloves.

Step 2

In a medium bowl, toss the beef stew meat with flour, salt, and black pepper until well coated.

Step 3

Heat the olive oil in a large skillet over medium-high heat. Add the coated beef in batches and sear until browned on all sides. Transfer each batch to the slow cooker as you go.

Step 4

Once the beef is seared and added to the crock pot, add the diced onion, sliced carrots, celery, potatoes, and minced garlic on top of the beef.

Step 5

In a mixing bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, and dried thyme. Pour the mixture over the ingredients in the crock pot.

Step 6

Tuck the bay leaf into the stew. Cover the crock pot with its lid and set it to cook on low for 8 hours (or on high for 4-5 hours).

Step 7

Thirty minutes before the cooking time ends, stir in the frozen peas. Let the stew continue cooking to allow the peas to heat through.

Step 8

Remove the bay leaf before serving. Garnish the stew with freshly chopped parsley. Serve warm and enjoy!
