  • 2 cups baby spinach leaves
  • 8 ounces angel hair pasta
  • 2 tablespoons parsley, chopped (optional, for garnish)
  • 0.25 cup grated Parmesan (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the diced onion, carrots, and celery. Cook for 5 minutes, stirring occasionally, until the vegetables begin to soften.
