  • 1 pound Ribeye or sirloin steak
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Smoked paprika
  • 2 tablespoons Olive oil
  • 1 tablespoon Unsalted butter
  • 1 large Yellow onion
  • 4 slices Provolone cheese
  • 2 medium Garlic cloves
  • 0.25 cup Mayonnaise
  • 1 teaspoon Lemon juice
  • 2 large Baguette or hoagie rolls
  • 1 cup Arugula (optional)

Directions

Step 1

Begin by removing the steak from the refrigerator 30 minutes before cooking to bring it to room temperature for even cooking.

Step 2

Season the steak with salt, black pepper, and smoked paprika on both sides.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the steak and cook for 3-4 minutes per side for medium-rare, or until your desired doneness is achieved. Remove the steak from the skillet, cover with foil, and let it rest for 10 minutes.

While the steak rests, thinly slice the yellow onion. In the same skillet, reduce the heat to medium and add the remaining tablespoon of olive oil and the butter. Once melted, add the onions and a pinch of salt. Cook, stirring occasionally, for 10-12 minutes or until the onions are soft and caramelized.
