  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 1 medium Green chili, chopped (optional)
  • 2 medium Tomatoes, finely diced

  • 0.5 cup Frozen peas
  • 4 cups Vegetable broth
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Garam masala
  • 1 teaspoon Salt
  • 2 tablespoons Fresh cilantro, chopped
  • 8 pieces Samosa pastry or wonton wrappers, cut into strips
  • 1 cup Oil for frying

Directions

Step 1

Heat 2 tablespoons of oil in a large pot over medium heat. Add cumin seeds and let them sizzle for 30 seconds.

Step 2

Add the chopped onions and sauté until they are golden brown, around 5 minutes.

Step 3

Stir in the garlic, ginger, and green chili (if using). Cook for 1-2 minutes until fragrant.

Step 4

Add the diced tomatoes and cook until soft and mushy, about 5 minutes.

Step 5

Stir in the coriander powder, turmeric powder, red chili powder, and garam masala. Mix well.

Step 6

Add the boiled and cubed potatoes and frozen peas. Stir to coat them in the spices and cook for 2-3 minutes.

Step 7

Pour in the vegetable broth and bring to a gentle boil. Reduce the heat and simmer for 10 minutes.

Step 8

Season the soup with salt and adjust seasoning as needed. Stir in the chopped cilantro just before serving.

Step 9

In a separate frying pan, heat 1 cup of oil over medium-high heat. Fry the samosa pastry or wonton wrapper strips until golden and crispy. Remove and drain on a paper towel.

Step 10

To serve, ladle the hot soup into bowls and top with the crispy pastry strips for crunch. Garnish with additional cilantro, if desired.
