Ingredients

  • 3 medium Potatoes
  • 1 cup Green peas
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Ginger, grated
  • 2 cloves Garlic, minced
  • 1 Green chili, finely chopped
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Garam masala
  • 0.5 teaspoon Red chili powder (optional)
  • 1 teaspoon Salt
  • 2 tablespoons Fresh cilantro, chopped
  • 1 tablespoon Fresh lemon juice
  • 16 oz Pie crust dough (store-bought or homemade)
  • 1 Egg, beaten (for egg wash, optional)

Directions

Step 1

Peel and dice the potatoes into small cubes. Boil them in a pot of salted water until fork-tender, about 10 minutes. Drain and set aside.

Step 2

Heat the vegetable oil in a skillet over medium heat. Add the cumin seeds and let them sizzle for 30 seconds until aromatic.

Step 3

Add the grated ginger, minced garlic, and chopped green chili to the skillet. Sauté for 1-2 minutes until fragrant.

Step 4

Stir in the ground coriander, ground cumin, turmeric powder, garam masala, red chili powder (if using), and salt. Cook the spices for 30 seconds to release their flavor.

Step 5

Add the boiled potatoes and green peas to the skillet. Stir well to coat the vegetables in the spice mixture. Gently mash some of the potatoes, leaving a few chunks for texture.

Step 6

Remove the skillet from the heat. Stir in the chopped cilantro and fresh lemon juice. Let the potato mixture cool completely.

Step 7

Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie pan.

Step 8

Roll out half of the pie crust dough and fit it into the bottom of the pie pan. Trim any excess dough hanging over the edges.

Spoon the cooled potato filling into the pie crust, spreading it out evenly.

Step 10

Roll out the remaining dough and place it over the filling. Trim the excess and crimp the edges to seal the pie. Cut small slits into the top crust to allow steam to escape.

Brush the top crust with beaten egg for a golden finish (optional).

Step 12

Bake the pie in the preheated oven for 35-40 minutes, or until the crust is golden brown and flaky.

Step 13
