Ingredients

  • 12 ounces Pasta (spaghetti or penne)
  • 6 slices Bacon, chopped
  • 2 cups Cherry tomatoes, halved
  • 3 units Garlic cloves, minced
  • 1 cup Heavy cream
  • 1.5 cups Grated Parmesan cheese
  • 0.5 cup Fresh basil leaves, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 0.25 teaspoon Crushed red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta until al dente according to the package instructions. Reserve 1 cup of pasta water before draining and set the pasta aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy, about 7-8 minutes. Remove the bacon from the skillet and place it on a paper towel-lined plate. Leave about 2 tablespoons of bacon fat in the skillet.

Step 3

Add the minced garlic to the skillet with the bacon fat and sauté for 1 minute, or until fragrant. Stir in the halved cherry tomatoes and cook for 5-7 minutes, stirring occasionally, until the tomatoes start to break down and release their juices.
