Ingredients

  • 500 grams carrots
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 0.5 teaspoons ground cinnamon
  • 0.25 teaspoons ground nutmeg
  • 1 teaspoon fresh thyme leaves
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons pumpkin seeds (optional for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Wash and peel the carrots. Trim off the ends and cut them into evenly sized sticks or diagonal slices about 1/2-inch thick.

Step 3

In a large mixing bowl, combine olive oil, maple syrup, ground cinnamon, ground nutmeg, thyme leaves, salt, and black pepper. Stir well to form a fragrant glaze.

Step 4

Add the carrots to the bowl and toss until they are evenly coated with the glaze.

Step 5

Spread the glazed carrots in a single layer on the prepared baking sheet. Make sure they are not overlapping to ensure even roasting.

Step 6

Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the carrots are tender and slightly caramelized around the edges.

Step 7

Remove from the oven and let cool for a minute or two. If desired, sprinkle with toasted pumpkin seeds for added crunch and seasonal flair.

Step 8

Serve warm as a delicious autumnal side dish, perfect alongside roasted meats, hearty stews, or grain-based dishes.
