Ingredients

  • 2 pounds Beef chuck roast
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, finely diced
  • 1 large Carrot, finely diced
  • 1 medium Celery stalk, finely diced
  • 2 cloves Garlic cloves, minced
  • 1 cup Apple cider vinegar
  • 2 cups Beef stock
  • 1 cup Dry red wine
  • 2 Bay leaves
  • 6 Whole cloves
  • 4 Juniper berries (optional)
  • 2 tablespoons Brown sugar
  • 2 tablespoons Cornstarch
  • 3 tablespoons Water (for cornstarch slurry)

Directions

Step 1

Season the beef chuck roast on all sides with 2 teaspoons of salt and 1 teaspoon of pepper.

Step 2

Heat a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the olive oil and sear the roast for 3-4 minutes on each side until deeply browned. Remove the beef and set aside.

Step 3

In the same pot, add the diced onion, carrot, and celery. Sauté for 5 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.

Step 4

Pour in the apple cider vinegar, beef stock, and red wine, scraping the bottom of the pot with a wooden spoon to release any browned bits.

Step 5

Return the seared beef to the pot. Add the bay leaves, whole cloves, juniper berries (if using), and brown sugar. Stir to combine and cover the pot with a tight-fitting lid.

Step 6

Lower the heat to a gentle simmer and cook for 2.5 to 3 hours, turning the beef occasionally, until the meat is tender and easily pulls apart with a fork.

Step 7

Once the beef is cooked, transfer it to a cutting board and cover it loosely with foil to keep warm.

Step 8

Remove the bay leaves, cloves, and juniper berries from the pot. Taste the cooking liquid and adjust seasoning with additional salt or sugar, if needed.

Step 9

In a small bowl, mix the cornstarch and water to create a slurry. Gradually add the slurry to the pot, stirring over medium heat, until the sauce thickens to a gravy-like consistency (approximately 3-5 minutes).

Step 10

Slice the beef and serve with the thickened sauce. Pair with traditional sides like red cabbage, potato dumplings, or egg noodles for a complete meal.
