Ingredients

  • 3 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 0.5 cup warm water
  • 1 teaspoon salt (for the dough)
  • 1 pound ground beef
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon allspice
  • 0.5 teaspoon salt (for the filling)
  • 0.25 teaspoon black pepper
  • 0.25 cup pine nuts (optional, toasted)
  • 1 egg, beaten (for egg wash)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour and 1 teaspoon of salt. Add the softened butter and mix using your hands or a pastry cutter until the mixture resembles coarse crumbs.

Step 2

Gradually add the warm water while kneading the dough until it comes together and is smooth. Wrap the dough in plastic wrap and refrigerate it for at least 30 minutes.

Step 3

In a skillet over medium heat, cook the ground beef until browned, breaking it into small pieces. Drain any excess fat.

Step 4

Add the chopped onion and minced garlic to the skillet with the beef and cook for 3-4 minutes, until the onions are soft and fragrant.

Step 5

Season the beef mixture with ground cumin, cinnamon, allspice, 1/2 teaspoon of salt, and black pepper. Cook for an additional 2 minutes, stirring to combine. If using pine nuts, stir them in at this time. Remove from heat and allow the filling to cool completely.

Step 6

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 7

Roll out the chilled dough on a lightly floured surface to about 1/8-inch thickness. Use a round 3-4 inch cutter to cut circles from the dough.

Step 8

Place a heaping teaspoon of the cooled beef filling in the center of each circle. Fold the dough over to create a half-moon shape and seal the edges by pinching them together or crimping with a fork.

Step 9

Arrange the sambusak on the prepared baking sheet. Brush the tops with the beaten egg for a golden and glossy finish.

Step 10

Bake in the preheated oven for 18-20 minutes, or until the pastries are golden brown and cooked through.

Step 11

Remove the pastries from the oven and allow them to cool slightly before serving. Enjoy warm or at room temperature!
