  • 100 grams green bird's eye chilies
  • 2 medium green tomatoes
  • 6 cloves shallots
  • 2 cloves garlic
  • 1 medium lime
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 3 tablespoons cooking oil

Directions

Step 1

Prepare the ingredients: Remove the stems from 100 grams of green bird's eye chilies and wash them thoroughly. Wash and quarter 2 medium green tomatoes. Peel 6 shallots and 2 cloves of garlic.

Step 2

In a steamer basket or a pot fitted with a steamer insert, steam the green chilies, green tomatoes, shallots, and garlic for about 5-7 minutes until they become soft but not mushy.

Step 3

Allow the steamed ingredients to cool slightly before transferring them to a stone mortar and pestle or a food processor.

Step 4

Pound or blend the ingredients until you achieve a coarse, chunky consistency. Be careful not to over-process if using a food processor.

Step 5

Heat 3 tablespoons of cooking oil in a pan over medium heat. Once the oil is hot, add the chili mixture to the pan.

Step 6

Stir fry the mixture for about 3-4 minutes, allowing the flavors to meld, and some of the excess liquid to evaporate.

Step 7

Season the sambal with 1 teaspoon of salt and 1 teaspoon of sugar, mixing well to ensure even distribution.

Step 8

Turn off the heat and squeeze the juice of 1 lime over the cooked sambal, stirring to combine.

Let the Sambal Ijo cool to room temperature before serving. Store in an airtight container in the fridge for up to a week.
