Ingredients

  • 1 can Spam (original or low sodium)
  • 2 cups Black-eyed peas (canned, drained and rinsed)
  • 4 cups Cooked white rice
  • 1 medium, diced Yellow onion
  • 3 minced Garlic cloves
  • 1 medium, diced Bell pepper (red or green)
  • 1.5 cups Chicken broth
  • 1 teaspoons Smoked paprika
  • 1 teaspoons Cajun seasoning
  • 2 tablespoons Olive oil
  • 0.5 teaspoons (adjust to taste) Salt
  • 0.25 teaspoons Ground black pepper
  • 2 stalks, sliced (optional, for garnish) Scallions or green onions
  • 1 teaspoon (optional, for serving) Hot sauce

Directions

Step 1

Dice the Spam into small cubes, approximately 1/2 inch each.

Step 2

Heat a large skillet or sauté pan over medium heat and add 1 tablespoon of olive oil. Once hot, add the diced Spam and cook until golden and crispy, about 5-7 minutes. Remove the Spam from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Toss in the diced onion and bell pepper. Sauté for 3-4 minutes, or until softened.

Step 4

Add the minced garlic and cook for another 30 seconds, until fragrant.

Step 5

Stir in the smoked paprika, Cajun seasoning, salt, and pepper. Mix well to coat the vegetables evenly.

Step 6

Add the black-eyed peas and cooked Spam back into the skillet. Stir everything together to combine.

Step 7

Pour in the chicken broth and bring the mixture to a gentle simmer. Let it cook uncovered for about 10 minutes, allowing the flavors to meld together and the broth to reduce slightly.

Step 8

While the Spam and black-eyed pea mixture simmers, prepare the cooked white rice and keep it warm if not done already.

Step 9

To serve, spoon a generous portion of the rice onto a plate or bowl and top with the Spam and black-eyed pea mixture.

Step 10

Garnish with sliced scallions or green onions, and drizzle with hot sauce for a spicy kick if desired. Serve immediately and enjoy!
