Ingredients

  • 400 grams Spaghetti
  • 150 grams Pancetta (or guanciale)
  • 4 pieces Egg yolks
  • 1 piece Large egg
  • 100 grams Pecorino Romano cheese
  • 2 teaspoons Freshly ground black pepper
  • 1 teaspoon Salt
  • 120 milliliters Pasta cooking water

Directions

Step 1

Bring a large pot of water to a rolling boil. Add 1 teaspoon of salt to the water.

Step 2

Cut the pancetta (or guanciale) into small cubes or strips, approximately 1 cm wide.

Step 3

Grate the pecorino Romano cheese and set it aside. For best results, use a microplane or box grater.

Step 4

In a mixing bowl, whisk together the egg yolks, whole egg, half of the grated cheese, and 1 teaspoon of freshly ground black pepper. Set the mixture aside.

Step 5

Cook the spaghetti in the boiling water according to the package instructions until it is al dente. Reserve 120 milliliters (½ cup) of the pasta cooking water before draining.

Step 6

While the spaghetti is cooking, heat a large skillet or frying pan over medium heat. Add the pancetta and cook for 5–7 minutes, stirring occasionally, until it becomes golden and crispy. Remove from heat but leave the pancetta in the pan.

Step 7

Once the spaghetti is cooked and drained, immediately add it to the skillet with the pancetta (off the heat). Toss to combine.

Step 8

Slowly pour the egg and cheese mixture over the hot pasta while tossing vigorously with tongs. The heat from the pasta will cook the eggs, creating a creamy sauce. If needed, add the reserved pasta cooking water, 1 tablespoon at a time, to loosen the sauce until it reaches your desired consistency.

Step 9

Stir in the remaining grated pecorino cheese and add more freshly ground black pepper to taste.

Step 10

Divide the pasta among serving plates and garnish with additional grated pecorino cheese if desired. Serve immediately.
