Ingredients

  • 4 whole Bell peppers (any color)
  • 2 tablespoons Olive oil
  • 1 pound Ground beef or turkey
  • 1 cup Cooked rice
  • 1.5 cups Salsa (your favorite type)
  • 1 cup Shredded cheddar cheese
  • 1 medium Onion (finely diced)
  • 2 cloves Garlic (minced)
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Fresh cilantro (chopped, optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the tops off the bell peppers and remove the seeds and membranes inside. Lightly brush the outside of each pepper with 1 tablespoon of olive oil. Set aside.

Heat the remaining 1 tablespoon olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, sautéing until fragrant and softened, about 2-3 minutes.

Add the ground beef or turkey to the skillet. Cook until browned, breaking it apart with a spoon, about 7-8 minutes. Drain any excess fat from the pan.
