Ingredients

  • 3 cups Cooked rice
  • 2 cups Black beans (cooked or canned, drained and rinsed)
  • 1.5 cups Shredded cheddar cheese
  • 1 cup Salsa
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 8 pieces Large flour tortillas
  • 1 teaspoon Cooking spray or olive oil
  • 8 pieces Aluminum foil or freezer-safe plastic wrap

Directions

Step 1

In a large mixing bowl, combine the cooked rice, black beans, shredded cheddar cheese, salsa, ground cumin, chili powder, and salt. Mix well until all the ingredients are evenly incorporated.

Step 2

Warm the tortillas in the microwave for 15-20 seconds to make them more pliable, or heat them individually in a dry skillet over medium heat for a few seconds on each side.

Step 3

Lay one tortilla flat on a clean surface. Spoon about 3/4 cup of the filling mixture onto the lower third of the tortilla, leaving space on the edges for folding.

Step 4

Fold in the sides of the tortilla, then roll it tightly from the bottom up, forming a burrito. Repeat with the remaining tortillas and filling.

Step 5

If serving immediately, lightly grease a skillet with cooking spray or olive oil and heat the burritos over medium heat for 2-3 minutes on each side, until golden brown and heated through.

Step 6

If freezing for later, wrap each burrito tightly in aluminum foil or freezer-safe plastic wrap. Place wrapped burritos in a freezer-safe bag or container and freeze for up to 3 months.

Step 7

To reheat from frozen, unwrap the burrito, place it in the microwave, and heat on high for 2-3 minutes, flipping halfway through. Alternatively, reheat in the oven by keeping it wrapped in foil and baking at 375°F (190°C) for 25-30 minutes until heated through.
