Ingredients

  • 2 medium Sweet potatoes
  • 2 tablespoons Cream cheese
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Salt
  • 0.5 teaspoon Cinnamon (optional)
  • 0.25 teaspoon Black pepper
  • 2 cups All-purpose flour
  • 1 large Egg
  • 0.5 cup Water
  • 1 tablespoon Vegetable oil

Directions

Step 1

Peel and cube the sweet potatoes into evenly sized pieces.

Step 2

Boil the sweet potato cubes in salted water over medium heat for 15 minutes, or until tender. Drain thoroughly.

Step 3

Mash the sweet potatoes in a bowl until smooth, then mix in cream cheese, butter, salt, cinnamon (if using), and black pepper. Adjust seasoning to taste and set aside to cool.

To make the perogy dough, combine the flour with a pinch of salt in a large mixing bowl. Make a well in the center and add the egg, water, and vegetable oil.
