Ingredients

  • 1.5 cups Arborio rice
  • 4 cups Chicken or vegetable stock
  • 0.5 cups Dry white wine
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 medium (finely diced) Yellow onion
  • 2 cloves (minced) Garlic
  • 0.75 cups (grated) Parmesan cheese
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons (chopped, for garnish) Fresh parsley
  • 1 cup Optional: Mushrooms or peas

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In an oven-safe skillet or Dutch oven, heat the olive oil over medium heat.

Step 3

Add the finely diced onion and minced garlic, and sauté for 3-4 minutes until soft and fragrant.

Step 4

Stir in the Arborio rice and cook for another 2 minutes, letting the rice lightly toast.

Step 5

Pour in the white wine, stirring gently, and let it simmer until mostly absorbed, about 1-2 minutes.

Step 6

Add the chicken or vegetable stock, salt, and pepper. Stir to combine.

Step 7

Cover the skillet or Dutch oven with a tight-fitting lid or foil and transfer to the preheated oven.

Step 8

Bake for 18-20 minutes, until the rice is tender and most of the liquid is absorbed.

Step 9

Carefully remove the dish from the oven and stir in the butter and grated Parmesan cheese until creamy.

Step 10

If desired, stir in optional cooked mushrooms, peas, or your favorite mix-ins at this stage.

Step 11

Plate the risotto and garnish with fresh parsley and additional Parmesan cheese, if desired. Serve immediately and enjoy!
