Directions

Step 1

Bring a large pot of salted water to a boil and cook the spaghetti according to the package instructions, until al dente. Reserve 120 milliliters (1/2 cup) of the pasta water before draining.

While the spaghetti cooks, dice the pancetta or guanciale into small cubes. Finely grate the Parmesan cheese. If using garlic, mince it finely.
