  • 1 pound Salmon fillet
  • 3 tablespoons Coarse sea salt
  • 1 tablespoon Granulated sugar
  • 1 bunch Fresh dill
  • 1 teaspoon Lemon zest
  • 0.5 teaspoon Black pepper

Directions

Step 1

Begin by rinsing the salmon fillet under cold water and pat it dry with paper towels.

In a small bowl, combine the coarse sea salt, granulated sugar, fresh dill (chopped), lemon zest, and black pepper. Mix well to create the seasoning rub.

Spread a large piece of plastic wrap on your work surface. Place half of the seasoning mixture on the wrap.

Lay the salmon fillet skin side down on top of the seasoning mixture.

Cover the salmon with the remaining seasoning mixture, making sure the fillet is evenly coated on all sides.

Wrap the salmon tightly with the plastic wrap, then place it in a shallow dish. If necessary, place a small weight on top of the salmon to enhance the curing process.

Refrigerate the salmon for 24 to 36 hours, turning the fillet every 12 hours to ensure even curing.
